Breakfast tip: Protein Pancakes! On my days off, I like to enjoy a more extensive breakfast. This time I made protein pancakes for me and the BF. I got inspired by a healthy foodblogger called Healthyfans, who I follow for a while now. It’s simple, quick and delicious! Read the recipe and directions below.
50gr Protein powder
(any kind you have, preferable with flavouring)
100gr fine oats
(you can also grind your oatmeal)
400ml Alpro Soya Coconut milk
Dash of honey and cinnamon
Don’t forget the coconut butter + toppings!
You just simply mix all the ingredients listed above. Melt some coconut butter in a frying pan and add about a spoonful of the mixture to the pan. This way you will get pancakes in the size of American Pancakes. Add multiple filled ‘spoons’ to your frying pan; mine could handle 4 at a time. When one side is ready, turn the pancakes gently, so they won’t break! Repeat this until you’re out of mixture. I could make about 12 in total.
I topped mine with some banana slices, low-fat quark, frozen raspberries, honey and coconut flakes. It looks so snowy, as if it is winter already! For my boyfriend, I added some typical Dutch ‘stroop’, and also some banana slices and coconut flakes. We enjoyed big time!
