Lentils Curry Stew

I love curry! Whether it is Thai or Indian; I just love the strong taste of it. It also doesn’t take long te prepare; about 30 minutes. Therefore I wanted to share this recipe I tried the other day for dinner. Stews are perfect for these cold days we encounter in the Netherlands. After my detox, I ate very strict with little variety, so that was quite boring to share with you. After the birthday of my roomie, our house was filled with sweets (read; junk), so it was time for me to sharpen my eating habits again! So here we go for the hundredths time….

This is what you’ll need to make this delicious chicken lentils curry stew ( 3 to 4 persons):

2 chicken breasts
1 small onion
3 garlic cloves
2 carrots
1 leak
Fresh coriander
300/350gr lentils
200ml coconut milk
80gr Patak’s mild curry (delisshhhh)
Seasoning
Olive oil


 First you cut the chicken breast into small pieces and fry them in a frying pan (wok) with olive oil, together with the onion and garlic. You add some seasoning to it and soms salt & pepper. In the mean time, you start cutting up the carrot and leak. When the chicken is almost cooked, you add the pieces of carrot and leak to the pan.

Secondly, you add about 50-100ml water to the pan and 80gr of the Patak curry paste. Mix everything together and let the vegetables cook for about 4-5 min. Don’t forget to add some chopped coriander to the mixture. You can also add fresh chilli or chilli flakes to the dish, to make it spicier.

At last, throw in the lentils and add the coconut milk to the mixture. Just let is cook for another 3 minutes, so the flavour really sets in. Sprinkle some extra coriander on top and now it’s ready to serve! My boyfriend eats it with rice, but I prefer to leave the extra carbs out and eat the stew as it is!
