Courghetti with gambas

Hello healthy food lovers out there! Today I’m sharing my version of the popular ‘Courghetti’ dish, which is Spaghetti made out of courgette = zucchini! I’m a real pasta lover, so I really hate I cannot afford eating pasta every week. Nevertheless, this is a great substitute for the low-carb days! Read the recipe below for one portion:


Half a Courgette (zucchini)
100/125gr Gamba’s
Olive Oil
A small Red Onion
2 Garlic Cloves
Green Pesto 
Parmesan Cheese

& you’ll need a ‘julienne’ cutter for your courghetti! I ordered mine via miniinthebox

1. Fry the gamba’s in a wok or frying pan with some olive oil, together with the onion and garlic.
2. While the gamba’s are cooking, it’s time to thoroughly wash the courgette. Take the julienne cutter, and make nice spaghetti looking strings.
3. Add the ‘courghetti’ to the gamba’s and add about a spoon full of pesto. Add some salt & pepper to your liking and stir fry for a minute or so.
4. Quickly fry the pinenuts in a dry frying pan and grate the parmesan cheese.

C’est tous! Add everything on a plate, and top the courghetti with the parmesan cheese and pinenuts. Bon appetit!

    dat ziet er wel heel lekker uit. helaas krijg ik nooit van die sliertjes. ook niet met zo’n speciale snijder daarvoor. dus ik heb t maar opgegeven.
