Banana Waffles

I love the weekends’! Ever since I’ve started at my new job, I really appreciate my weekends’ off. Also, it’s the perfect time to try out new recipes. I thought of making pancakes, but ended up making these delicious gluten, dairy & sugar free banana waffles! Check out the recipe below.

INGREDIENTS
for 1 portion (2 waffles)

1 mashed ripe banana
1 teaspoon of baking soda
1 egg
2 spoons of almond flour
1 spoon of buckwheat flour
Dash of Alpro coconut milk
Cinnamon
Coconut oil
A waffle iron & some tea 

Start by mashing the banana. Than mix all the ingredients together in a bowl. You can add cinnamon or gingerbread (speculaas) spices for flavor to your batter.

Take out some coconut butter and let it melt in your waffle iron. Now it’s time to add the batter! Slowly close the waffle iron and let it sit for about 2-3 minutes, per waffle.

Because of the ripe & sweet banana, you’ll not need any added sugars. For topping I simply used Optimel Greek Yogurt with raspberry flavor, some shredded coconut and fresh strawberries!
