Banana Bread Recipe

It’s almost weekend, that means baking time! For a while now I wanted to try this banana bread thing, of which I see it more as a banana cake.The cake turned out perfect for my first try! So I wanted to share the recipe with you of my Banana (cake) Bread:

Ingredients:
3 Ripe bananas

3 eggs
40gr Coconut Flour 
Dash of honey
Pinch of salt
Teaspoon of baking soda – I’m in love with the co-co
Coconut Oil
5 Dates
100gr Dark Chocolate 70%
Coconut Flakes

Start by preheating your oven at 180°C. Take out your baking pan and generously grease it with coconut oil. Then it’s time to mash your bananas in a large bowl – I simply used a fork. When the mixture is smooth, add the 3 eggs, a dash of honey and blend well.

Now it’s time to add the dry ingredients to the mixture. Add the coconut flour, baking soda and a pinch of salt to the banana and egg mixture. Mix all the ingredients with each other and then let it sit for a few minutes – time to clean up your mess and cut the dates and chocolate into small pieces.

Last, add the dates and chocolate to the mixture, together with a handful of coconut flakes. Mix it evenly through the mixture and then add it to your baking pan. Put it in the oven and bake the banana cake for 45 minutes until the top turned brownish.

Yeah, it’s ready! Wait until the cake is cooled down before you slice it. For me this version was sweet enough because of the dates and chocolate, and the sweet bananas! So no topping was needed. It’s a perfect snack during breakfast or lunch!
